A Pétillant Naturel, or Pet Nat for short, is the original method of sparkling wine production. In this traditional approach, the still-fermenting grape must be bottled, sealed with a crown cork, and allowed to finish fermenting in the bottle.

This pink-coloured organic sparkling wine is available only in limited quantities. Made from the juice of Blaufränkisch and Zweigelt grapes, it is partially fermented in a steel tank before being bottled unfiltered and unsulphured, where it completes fermentation. The result is a semi-dry sparkling wine that is irresistibly drinkable.

Be cautious when opening Pet Nat; it can splash a little, making it a fun party starter. Slight cloudiness, streaks, or yeast deposits may appear in the bottle, but these are natural and do not detract from the fine flavour, instead proving that the wine has not been filtered.
