Pet Nats are all the rage at the moment, but what exactly is a Pet Nat?

A Petillant Naturel, or Pet Nat for short, is the original form of sparkling wine production. In this method, the still fermenting grape must is bottled, sealed with a crown cork and then fermented in the bottle. This requires an intuitive feel and perfect timing on the part of the winemaker. In comparison, sparkling wine and champagne are fermented a second time in the bottle (or tank) with added yeast and then the sugar level is adjusted using the "dosage" process. None of this is done with a Pet Nat.

Be careful when opening a bottle of Pet Nat: it can fizz and splash - but this also makes it the perfect way to kickoff a party. Slight cloudiness, streaks or deposits of yeast may occur in the bottle but this does not detract from the fine flavour and only proves that it is completely unfiltered.
