Hailing from Pössnitz, Erwin attaches great importance to the extremely careful and natural cultivation of his vineyards, always considering the terroir. His quality standards are very high and he is the tenth generation to run the family winery. For his two younger brothers Gerd and Christoph, there was a single trigger - the fascination with wine - for their decision to also join the family business full-time. They are now an indispensable part of the winery. The Erwin Sabathi winery has been a member of the internationally renowned "Styrian Terroir and Classic Wineries", or "STK" for short, since 2013.

The great STK location in Pössnitzberg has always been of enormous importance to the winery, although only the southernmost part of this cadastral community is designated as Pössnitzberg. 23 of their 39 hectares are in this extremely steep and rocky vineyard, which has very old vines. Farming here is very time-consuming and, partly due to the slope of up to 75 percent, can only be done manually. The soils of these mainly south-facing basin vineyards with eastern and western foothills are barren and heavily calcareous (Opok). For the 2011 vintage, there was a small change in the range: “Merveilleux” became “Alte Reben”. Grapes from the oldest vines on the Pössnitzberg, Chardonnay and Sauvignon Blanc grape varietals, are used for this wine. It is then aged for 18 months old in oak barrels - a true rarity.
