This premium tequila comes from one of the most renowned tequila producers in Mexico, the Agrotequilera de Jalisco, which is run by the Gallardo family. The Volcán de mi Tierra Blanco, which is made from 100% blue Weber agave, is produced in small batches in a complex production process. The basis is the agave hearts known as "pina" which are sourced from both the highlands (Los Altos) and the lowlands (Los Valles). The latter are traditionally baked in a brick oven for at least 36 hours and then crushed. The resulting juice is fermented partly with natural yeasts from the agave leaves in a wooden vat and partly with champagne yeast. The juice from the agave hearts from the highlands is fermented with rum yeast in stainless steel tanks. The first distillation takes place in stainless steel stills while the second distillation takes place in copper. After a resting phase, the tequila is bottled at 40% alcohol by volume.

This time-consuming process is reflected in the quality of the tequila. The full-bodied, strong flavour is initially slightly sweet with hints of agave, honey and a touch of vanilla. This is followed by notes of herbs, grapefruit and black pepper. The long finish hugs the palate like a warm cloak.
